Vegan Butternut Squash



Roasted Squash - 1400 g (about 1 large, peeled and cubed)

Garlic - 16 g (about 3-4 cloves)

Sage - 2 g (4-5 leaves or to taste)

Water - 925 mL

Onion - 300 g (about 1 large)

Chilli Powder - 1 teaspoons

Smoked Paprika - 2 teaspoons


1.      Saute garlic and onions in a pan until translucent

2.     Add chili powder and paprika and toast until the spices dissolve into the liquid released by the onions and garlic

3.     Add cubed squash and water or vegetable broth and bring to a boil

4.     Once fork tender, add sage and blend ingredients together
