Vegan Butternut Squash



Roasted Squash - 1400 g (about 1 large, peeled and cubed)

Garlic - 16 g (about 3-4 cloves)

Sage - 2 g (4-5 leaves or to taste)

Water - 925 mL

Onion - 300 g (about 1 large)

Chilli Powder - 1 teaspoons

Smoked Paprika - 2 teaspoons


1.      Saute garlic and onions in a pan until translucent

2.     Add chili powder and paprika and toast until the spices dissolve into the liquid released by the onions and garlic

3.     Add cubed squash and water or vegetable broth and bring to a boil

4.     Once fork tender, add sage and blend ingredients together

Broccoli Cheddar Soup



Raw Broccoli - 875 mL (3.5 cups)

Old Cheddar ~ 150 g (1/2 to 1 cup grated)

Whole Milk - 375 mL (1.5 cups)

Broccoli Water - 850 mL

Flour - 2-3 tablespoons

Butter - 2-3 tablespoons

Zest of one lemon

Salt and pepper - To taste


1.      Blanch Broccoli until tender. Careful not to overcook as color can change and become less vibrant green. Reserve water from blanching (Broccoli water)

2.      Meanwhile create a roux by melting equal parts butter and flour together in a large stockpot. When the roux has reached a nice thick consistency and lightly brown, add the lemon zest and season with salt and pepper.

3.      Gradually, 1/4 to 1/2 cup at a time, add whole milk to roux and whisk briskly to take out lumps. Most lumps will melt out as the roux heats.

4.      Blend Broccoli and Broccoli water together in Vitamix or blender then whisk into roux mixture

5.      Stir in grated cheese to finish; optional to blend again with immersion blender for an extra-smooth consistency.

We are deeply sorry for our absence this fall. Souper as you have known it will be on a hiatus for the foreseeable future. A select few of our recipes may soon be available in Guelph and Kitchener-Waterloo, but under a different brand name. More details on this will be announced as soon as possible. Our goal is to have some product available for purchase in the new year.  In the meantime, we will be posting some recipes to our blog of your favourite simple, wholesome soups to help tide you over and inspire.


Summer & Beyond


With the advent of spring, Souper’s winter delivery menu has come to an end. Firstly, we want to thank all of our supporters who’ve made the last few months an incredible experience for us. Thank you to both our customers and various collaborators! We hope everyone enjoyed themselves as much as we did!

We’ll be back in September 2017 with a fall delivery menu. In the meantime, you can keep up to date with Souper by subscribing to this blog! We’ll update it periodically with new information regarding events and festivals we will be at this summer.

Chana & Black Bone Tea


For our last week, we have two special offerings, neither of which is really a soup.

First, our Chana Masala is making a return. This Chana is completely vegan and very filling. It’s stuffed with chickpeas and tomatoes and packs plenty of flavour into a 1-litre jar. We recommend serving over your favourite rice to make it a complete meal.

Our second offering this week is Black Bone Tea. This product is a light, chicken-broth with herbaceous notes of lemongrass, lavender and ginger. You can drink it warm for a comforting feel, or have it cold to refresh yourself.

Both of these products are available to order until Saturday. They will go out for delivery on Monday, April 3rd.

Gumbo and Miso


Gumbo is back! This week, order a jar of one of our top sellers. The toasted flour in the dark roux gives this stew a deep and complex flavour, and it’s packed with chunks of veggies and sausage. We’ve added fish sauce to give it some umami. And of course, it wouldn’t be a proper gumbo without some spice. You can eat this soup hot on its own or, for a more complete meal, ladle some over rice and top with fresh herbs.

Our other offering this week is almost the complete opposite of Gumbo. Miso is also making a return! This vegan soup is a minimalist’s dream. It’s a classic, Japanese soup that is simple and light, yet savoury. Our version is packed with healthy green chard and tofu. We recommend heating it up and eat on its own.

Both of these soups are available to order now until Saturday. They’ll be going out for delivery on Monday, March 27th.

Sweet Potato & Clam Chowder


Souper’s vegan offering this week is Sweet Potato soup. This soup has been carefully crafted to balance sweetness with an herbaceous flavor. It’s a great blend of sweet and a little bit of spice from added chili. And, as with all of our soups, the texture is simply beautiful. Enjoy this soup on its own, or as a companion during a larger meal. We’re sure you’ll find it delightful.

Satisfy a bunch of cravings at once this week with our Clam Chowder. Everything about this soup is indulgent. It’s thick with milk and cream, as well as having meaty flavour from both clams and bacon. But no worries, it’s not too rich. The added white wine cuts through everything just perfectly. One jar of this is sure to go a long way. We recommend enjoying it with even more bacon on top, and a full-bodied white wine such as an oaked chardonnay.

Spicy Sausage Lentil and Dahl


This week an old favourite makes a return in the Spicy Sausage and Lentil Soup! This soup is packed with fresh ingredients and is incredibly flavourful! Since it’s so filling, the Spicy Sausage and Lentil Soup is perfect as meal (or three) on its own. We recommend pairing it with an equally hearty bread.

We are also excited to announce a new soup! Dahl joins our line up of vegan soups and it’s the perfect counterpoint to the Spicy Sausage and Lentil. This soup has Indian influences and also uses lentils, yet where the Spicy Sausage is hearty, the Dahl feels light. It’s packed with flavour, but doesn’t compromise on being a healthy choice. It’s also a great choice for breakfast in the morning!

Smoked Split Pea & Cream of Mushroom


After taking a break for a week, Souper is back with some exciting soups.

Smoked Split Pea is a great take on a classic soup. We’ve added smoked ham hock to give our soup a unique flavour, yet it still tastes fresh with herbal notes of bay leaf and thyme. It’s perfect for those in-between days where you aren’t quite sure if it’s spring yet. Try making our Easy Artisan Loaf and eat this soup with some fresh bread for a delicious meal.

Cream of Mushroom is our vegetarian option this week. This soup is simply delightful! The whole milk and cream give it a nice texture while the mix of mushrooms we’ve added is sure to please any mushroom lover. Eat this soup alone, or get creative and use it as a creamy sauce over chicken.

This Saturday, February 11th, come visit Souper at the Guelph Farmers’ Market! We’ll be there all morning serving samples of this week’s Broccoli soup as well as the Bacon White Bean soup. We’ll also be selling hot bowls if these soups, as well as our standard 1 Litre jars.

So come by and meet the Souper team! We had such a blast at the Christmas Night Market, and we’re looking forward to seeing everyone again and meeting new people!

Valentine's Day


With Valentine’s Day around the corner, Souper has decided to show you how to serve two of our old favourites for a special loved one.

First up is Broccoli. If you really want to impress a date, serve this beautiful, smooth and light soup as an appetizer before dinner. You can even pass it off as your own creation (we won’t tell!). If you’re going to pair this soup with wine for Valentine’s Day, we recommend a light red, like Pinot Noir or a delicate white, such as a Chardonnay or Reisling.

Next is Bacon White Bean. If you’re having a more low-key Valentine’s Day (or perhaps you’re not the best cook) you can serve this tomato-based, dairy free soup with a grilled cheese sandwich. Pair it with an inexpensive wine or beer of your choice. While this meal is nostalgic, it’s certainly not basic!

Beet and Beef Noodle!


This week, Souper is once again pairing an old favourite with something new!

Remember the velvety, smooth Beet Soup from the fall? This vibrant soup is back again for the winter. This soup is completely vegan, with the creaminess coming from coconut milk. It tastes as beautiful as it looks! This beet soup is great on its own or as a bright appetizer before your meal.

Also available this week is an entirely new soup. Vietnamese Beef Noodle is a hearty, dairy free, soup based on a traditional recipe from Allan’s family. It has a nice, meaty flavor that is just the tiniest bit sweet and packed with umami. We recommend serving it with some fresh herbs on top, like cilantro, or even some chopped green onion (although it’s delicious without these too). This soup makes for a delicious meal on its own. In fact, it’s so filling, you can get four bowls out of one jar.

We’re members of The Kitchen Collective. The Kitchen Collective is a co-operative, which means it’s owned and operated by its members. More importantly, it is a non-profit, fully-equipped, commercial kitchen that was created to give small businesses like ours a place to work and learn. It’s inspected and improved to ensure that everything created there is safe. Allan and Brandon are both students of food science, so you can be sure that food safety is important to Souper.

Easy Artisan Loaf

What better way to eat chilli than with a loaf of fresh baked bread? Pop it in the oven right before you serve guests (or a date) and the smell of fresh baking bread will be sure to impress.This recipe is super easy (it requires no kneading), and is completely customizable! For this recipe, you’ll need a few simple ingredients and a Dutch oven or any large oven-safe dish or bowl with a lid (you could even cover a baking dish with aluminum foil).


3 cups all-purpose flour

2 teaspoons salt

1 teaspoon active dry yeast

1 ½ cups lukewarm water

Optional: Herbs, spices, dried fruit, nuts, cheese, etc.


In a large bowl, stir together the flour, salt and yeast. Add the water and mix until the dough just begins to come together. Do not overmix! (If you wanted to add anything extra to the dough such as herbs or spices, now would be the time to mix it in).

Cover the bowl tightly with plastic wrap and let the dough sit at room temperature for 8-24 hours. Making it the night before and letting it rest overnight is a good idea.

Preheat the oven to 450 degrees F (232 degrees Celsius) and place the Dutch oven or oven-safe dish inside, uncovered, to preheat the oven.

While preheating, turn dough onto a well-floured surface. If you have a bench scraper you can use to scoop all the sticky dough out of the bowl (otherwise, your hands are fine). Form the dough into a ball and cover it loosely with plastic wrap to let it rest while the oven is still preheating.

Once preheating is done, carefully remove the Dutch oven or dish and place the bread dough in it. Score the top of the dough with a knife in an “x” pattern. If you are not using an enamel Dutch oven, it’s recommended that you put a piece of parchment paper beneath the dough to prevent the bread from sticking.

Cover the Dutch oven or baking dish and bake for 30 minutes. After 30 minutes, remove the cover and bake for another 7-15 minutes uncovered.

Allow the bread to cool on a cutting board before cutting it.



Do you feel like winter is just going to go on forever? Warm up on January 30th with a jar of chilli! Both of these soups are delicious and rich with a hint of dark chocolate and smoked paprika. The Beef Chilli is made with beef shoulder, while the Vegetarian Chilli features red kidney beans.

We recommend serving both these soups with a dollop of sour cream on top and some fresh herbs. Maybe even some green onion? These soups are delicious on their own, but some simple toppings can make them seem indulgent.

Have a date night planned?  You don’t need to break the bank to impress. Heat up a jar of this chilli and pair it with a bottle of wine. We recommend a Tempranillo from the Rioja region. And check back later this week for an easy bread recipe to serve as well!

January 16th Soups – An Old Classic and Something New!


Our two soups this week are perfect for warming you up!

An old favourite returns with our Squash soup! If you came by our booth at the Guelph Holiday Night Market before Christmas, you may remember sampling this one. This soup has an herby, yet smoky flavour. It’s also creamy in texture without any dairy being added (it’s vegan). A jar of this soup can last three meals if eaten as a side with something like a sandwich, or two meals if just eaten on its own.

The Viet Curry is a new soup this winter, and it’s delicious! Inspired by the culture and food of Vietnam, it has a savoury, spiced, coconut milk base, with tender pieces of chicken. And it’s dairy free! We recommend serving this soup over rice to give you a full three meals out of one jar (although it can be eaten on its own). You could even use our photos as a guide and squeeze some lime on top, or add some fresh Thai basil (or just regular basil).

Souper has grown immensely and we learned a great deal of invaluable lessons over the course of 2016. Many great milestones were achieved within the last 12 months. Among them, being accepted into the CBaSE Hub Incubator Program as well as entering the Guelph Farmers Market. We are extremely proud of what has been achieved and equally thankful to serve such incredible customers. Without your support, none of this could have happened. 

We’ve taken some time over the course of the holidays to reflect and we have come to appreciate that the essence of our company is the same as that of the community - you. With that in mind, we remain focused on listening to our customers and serving you in whatever way possible. We have revised our system to produce two soups weekly. As well, we will be offering our specialty soups at the Guelph Farmers' Market on Saturdays.  

Thank you again for the endless support and continued business. We look forward to serving you the best soup Guelph has to offer in the coming year!
